Vanilla Celebration Cake
A light and fluffy vanilla cake perfect for birthdays and special occasions. Topped with smooth buttercream frosting.
Ingredients
- • 3 cups all-purpose flour
- • 1 tablespoon baking powder
- • 1/2 teaspoon salt
- • 1 cup unsalted butter, softened
- • 2 cups granulated sugar
- • 4 large eggs
- • 2 teaspoons vanilla extract
- • 1 cup whole milk
Instructions
- 1 Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- 2 In a medium bowl, whisk together the flour, baking powder, and salt.
- 3 In a large bowl, beat the butter and sugar until light and fluffy, about 3 minutes.
- 4 Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- 5 Gradually add the flour mixture to the butter mixture, alternating with the milk, beginning and ending with the flour mixture.
- 6 Divide the batter evenly between the prepared pans. Smooth the tops with a spatula.
- 7 Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
- 8 Cool the cakes in the pans for 10 minutes, then remove from pans and cool completely on wire racks before frosting.
Notes
For best results, make sure all ingredients are at room temperature before beginning. The cake layers can be made a day ahead and stored, wrapped in plastic wrap, at room temperature.
